Dr Tadao Saito

Emeritus Professor

Dr. Tadao Saito serves as Chair of the Japanese National Committee of the International Dairy Federation and as Chair of the International Committee of J-Milk. Dr. Saito specializes in food science and applied microbiology, with particular expertise in the chemistry of milk and dairy products, as well as the intestinal microbiology of lactic acid bacteria and Bifidobacteria. Dr. Saito worked at Tohoku University for 30 years, serving as a professor engaged in education and research for 18 of those years. During that time, he served as President of the Asian Federation of Societies for Lactic Acid Bacteria (AFSLAB), which unites lactic acid bacteria societies from 13 Asian countries, and as President of the Japanese Dairy Science Association (JDSA). He also served for 10 years as an outside director at Oenon Holdings Co., Ltd., a manufacturer of lactase, where he provided research guidance at the company’s Central Research Laboratory. He currently works at J-Milk, which oversees Japan’s dairy industry, where he provides guidance on milk science in Japan.

Mr. Saito earned his Doctor of Agricultural Sciences and Master of Agricultural Sciences degrees from Tohoku University, a national university corporation. Prior to joining Tohoku University, he worked on the production floor at Kyodo Milk Co., Ltd. and in the Food Hygiene Laboratory at Tohoku Fukushi University.
